Highly marbled, tender, and full of flavor, it's not hard to see why this is one of the most prized cuts. The caps are peeled off the main loin, rolled, and tied (pinwheeled). PLEASE NOTE THAT THE CUT WILL BE TIED WITH A BUTCHERING STRING. The string is food-safe and oven-safe and can be cut off after cooking.
