The Amur (Acipenser Schrenckii) caviar is cherished by many for its unique flavor profile with floral, nutty, buttery notes. Owing to N25 sturgeons being twice as old as others, they produce high quality roes that allow N25 to age them for an extended period of time of 3 to 6 months. Only a select amount of the highest grade of caviar will be selected for aging. The Golden Selection uses only 100% pure Acipenser Schrenckii, the roe is medium in size and light brown in color with a beautiful golden shimmer.
